Finishing exams, Baking and Gilmore Girls

So I'm a fourth year English Literature student at The University of Aberdeen, lots of reading and writing so I thought I would make a wee blog to incorporate the lot! So hello!
I finished my exams today...off for a whole week, beautiful, so to celebrate I came home and had a day of baking and watching Gilmore Girls, I made chocolate peanut butter cups and chocolate cupcakes with peanut butter icing - Nom nom nom!


Chocolate Cupcakes

  • 125g Softened Butter
  • 125g Sugar
  • 125g Plain Flour
  • 1 tsp Vanilla Extract
  • 1 tsp Baking Powder
  • 1/2 tsp Bicarbonate of Soda
  • 2 tbsp Cocoa Powder
  • 2 Eggs
  1. Preheat the oven to 200 degrees
  2. Cream together the Butter and the Sugar in a bowl either by hand or with an electric whisk.
  3. Add in the flour a little bit at a time along with the eggs one at a time.
  4. Add in the Baking Powder, Bicarbonate of Soda and Vanilla Extract - whisk until light and fluffy.
  5. Mix in the Cocoa Powder to your taste.
  6. Spoon into muffin cases and bake for 15-20 minutes
Peanut Butter Icing Mixture
  • 115g Softened Butter
  • 260g Smooth Peanut Butter 
  • 45ml Milk (or as needed)
  • 250g Icing Sugar
  1. Beat Butter and Peanut Butter together.
  2. Gradually mix in the icing sugar and incorporate milk when it starts to get thick (one tbsp at a time)
  3. Mix until thick and spreadable (about 3 minutes usually)
